Free - Sugars in Ordinary Korean Soy - Sauce


Abstract
Ordinary Korean Soy-sauce samples obtained from several homes in Seoul area were analysed by paper partition chromatography method on the free-sugars. The following results were obtained.
1) Galactose, glucose, arabinose and xylose were detected in ordinary soy sauce.
2) The abundance of the found sugars : galactose, arabinose, nylose and glucose in the order.
